Meat and Poultry Inspection Industry Information

The Meat and Poultry Inspection program registers processors, inspects processing operations and samples products.  Because the state program is “equal to” federal meat inspection, we have helped the state’s small processors learn about and comply with new federal requirements, such as the Hazard Analysis and Critical Control Point (HACCP) plans, as they are put into place.  Registered facilities include fully inspected meat plants – those which can sell directly to the consumer, hotels and restaurants and retail stores within Kansas; custom plants – those which process meat for the owners, their families and guests; wholesalers; animal food manufacturers and brokers.

An applicant for a registration must provide all information requested and pay an application fee based on the number of animals slaughtered.  Only the person who is named on the registration can conduct operations at that registered establishment.  Persons interested in entering this business should contact us. Our review team will visit your establishment and make suggestions to meet requirements necessary to become registered and begin operating.

Meat and Poultry Application for Registration Application for registration of broker, animal food manufacturer, small seasonal slaughter facility, state-owned facility at regent institution, facility at public secondary school, custom slaughter and/or processing facility, and inspected slaughter and/or processing facility.

Meat and Poultry Custom Form Application for custom and retail operation exemption.  This is a supplemental form custom operators need to complete along with the Meat and Poultry Registration Application.

Wholesaler or Public Warehouseman Application for Registration  Application for registration of Meat and Poultry Wholesaler or Public Warehouseman.

Wholesale Form  This is a supplemental form to the Meat and Poultry Wholesale Application.  Registered wholesalers need to indicate which approved slaughter/processor is used to process their product.

Wholesale Guidelines  Specific requirements to be fulfilled as a wholesaler of meat and/or poultry products in the State of Kansas.

Retail Store Handout  Information pertaining to persons operating a retail store or similar retail-type business.

New Facility Survey  A survey completed by inspection staff when a person is proposing to open a new facility under inspection.

New Facility Handbook  A handbook prepared for persons proposing to open a new facility to come under inspection with the Kansas Meat and Poultry Inspection program.

Establishment Review Guide  A review completed by inspection staff to determine if the facility is acceptable in requirements necessary to become registered and begin operations.

Recommended Physical Standards for Meat and Poultry Slaughter/Processing Plants This document covers requirements such as outside premises, plant construction, plant lighting, plant refrigeration, water supply, waste disposal, equipment and more.
